line & lee chicken caesar sandwiches

1 cup mayo
3 TBS lemon juice
1 clove garlic - minced
1/2 tsp dijon mustard
2-3 TBS flat leaf parsley - chopped
1 tsp anchovy paste

2 grilled chicken breasts (or a rotisserie chicken) - chopped or thinly sliced
in a large bowl, combine the mayo, lemon juice, garlic, dijon mustard, parsley, and anchovy paste, mix until well combined--season with salt and pepper. you can either mix the sauce with the chicken or just spread on the bun. to make the sandwich, layer the chicken, arugula, and shaved parm.
*if combining the sauce with the chicken, store in an airtight container in the fridge for up to three days.
