blueberry cobbler
slightly adapted from The New York Times via Chez Panisse
serves 8
Recipe note: easy

for the berries
4 1/2 cups fresh blueberries
1/3 cup sugar
1 TBS flour

for the dough
1 1/2 cup flour
1/2 tsp kosher salt
1 1/2 TBS sugar
2 1/4 tsp baking powder
8 TBS butter - cut into 1/2 inch pieces
3/4 cup heavy cream

preheat your oven to 375 F. prepare the berries in a 1 1/2 quart baking dish by tossing them with the sugar and flour. set aside.

to make the dough, mix the flour, salt, sugar and baking powder in a bowl. cut in the butter until the mixture is a course meal. add the cream and mix until just combined.

scoop small dough patties (approx. 2x1 inch rounds) onto the berries. bake until the topping is golden and the blueberry juices are bubbling, 35-40 minutes.

serve with vanilla bean ice cream!
